Bhubaneswar, Nov 8: The eagerly awaited festival of lights is right around the corner, and our excitement knows no bounds. Each year, Diwali is celebrated with immense enthusiasm and grandeur throughout the nation.

This year, Diwali falls on November 12. On this special occasion, people adorn themselves in new attire, exchange heartfelt gifts with their loved ones, and adorn their homes with radiant lights and vibrant colors. It's a day dedicated to reveling with family and friends, as people visit the homes of their dear ones and spend quality time together. The delectable Diwali-special snacks are undeniably a highlight of the festivities.

As we gear up to celebrate the festival of lights, here are two delightful Diwali snack recipes that you can easily prepare at home.

Fulwadi:

Ingredients:

  • 1½ cups gram flour (besan)
  • ½ cup whole wheat flour (atta)
  • 2 tablespoons semolina (suji)
  • ½ teaspoon dried fenugreek leaves (kasuri methi)
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • ¼ teaspoon garam masala powder
  • ½ teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 teaspoons sugar
  • A pinch of crushed black peppercorns
  • 2-3 tablespoons hot oil for deep frying

Method:

In a mixing bowl, combine gram flour, whole wheat flour, semolina, dried fenugreek leaves, turmeric powder, red chili powder, garam masala powder, cumin powder, coriander powder, salt, sugar, crushed black peppercorns, and hot oil. Mix the ingredients thoroughly.

Gradually add water and knead the mixture into a dough. Allow the dough to rest for 10 to 15 minutes.

Divide the dough into equal portions and shape them into semi-thick roundels. Use a fork to prick the portions and then cut them into small squares.

Heat oil in a pan and deep fry the fulwadis until they turn golden brown and crispy. Remove excess oil by draining them on absorbent paper before serving.

Apricot Jam Nankhatai:

Ingredients:

Apricot jam, as required

  • 1½ cups refined flour (maida)
  • ¼ cup gram flour (besan)
  • ¼ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon green cardamom powder
  • 1 cup powdered sugar
  • ¾ cup melted ghee
  • Pistachio powder for sprinkling

Method:

In a large bowl, combine refined flour, gram flour, baking soda, baking powder, green cardamom powder, and powdered sugar. Mix the ingredients thoroughly.

Make a well in the center and add melted ghee. Mix everything well until a smooth dough forms.

Divide the mixture into equal portions and shape them into small balls. Flatten them slightly and create a cavity in the center.

Place them on a tray and bake in a preheated oven for six to eight minutes.

After baking, fill the cavities with apricot jam and bake for an additional two to three minutes.

Once done, sprinkle pistachio powder on top and allow them to cool completely before serving.
