Pravasi Bharatiya Divas 2025: The Menu for Delegates and VIPs on the Concluding day.

On the concluding day of Pravasi Bharatiya Divas, the attendees will have a culinary experience on a rich and diverse menu. The menu carefully curated for VIPs, and Delegates, will have Indian cuisine, with a touch of international flavors.

Packed Meals:

For those on the go, a convenient and flavorful packed meal option will be provided. The packed lunch will be a balanced combination of a fresh Green Salad, Achari Paneer Korma (Cottage cheese in a tangy pickled gravy), Mix Vegetable Curry, Yellow Dal Tadka (tempered yellow lentils), Saffron Pulao (aromatic rice dish), and Chhena Poda (a traditional Odiya dessert). The packed meal will be complemented with a Mineral Water Bottle and Plain Curd. The packed dinner will be a simpler affair, with 3 Pcs Paratha (Indian flatbread), Kadai Paneer (Cottage cheese in a spicy tomato-based gravy), Gulab Jamun (a classic Indian sweet), and a Mineral Water Bottle.

Lunch:

The grand lunch spread, will be a feast for the senses. The Salad course for a refreshing start will be Garden Green Salad, crunchy Kachumber Salad, Mustard Pepper Rubbed Potato with Confit Garlic, Tomato Mozzarella with Sweet Basil, and a variety of Pickled and Fresh Onions and Chilies. Guests can enjoy Dahi Bhalla (lentil dumplings in yogurt) and Cucumber Raita.

The Soup will be choice of Cream of Mushroom Soup and locally inspired Kolatha Dali Palanga Soup, accompanied by a selection of breads.

The Main Course will be of Indian flavours. Vegetarians will savour Achari Paneer Kurma, Tawa Vegetable, regional specialties like Pariba Besara with Nadi and Puri Dalma, along with Kalara Chips, Saffron Pulao, Ghia Arna, and Yellow Dal Tadka. Non-vegetarians will have a choice of Kadai Murgh (chicken in spicy gravy) and Bengali Style Fish Curry. A variety of Indian Breads, including Tandoori Roti, Pudina Paratha, Lachha Paratha, and Millet Poori, will complement the main course.

The Dessert will feature Nizam Ki Nazakat, Pal Payasam (a South Indian rice pudding), and a sugar-free Fruit Trifle.

Hi-Tea:

The afternoon Hi-Tea, will be a lighter affair, perfect for the mid-day bite. Guests will enjoy Juice Tetra Packs, Tea, and Coffee, Assorted Cookies and Millet Cookies. Savory options include Veg Junglee Sandwich, Fruit Cake Slice, Bengali Style Veg Chop, and Samosa. The sweet treat: Dry Kala Jamun. Chicken Banjara is added to the VIP menu.

Dinner:

The grand finale of the day will be the dinner. The evening will begin with Welcome Drinks, including a refreshing Pineapple Blossom and a Mocktail Bar.

The Starter consists of both vegetarian and non-vegetarian options. Vegetarians will enjoy Ajwani Malai Paneer Tikka (cottage cheese marinated in carom seeds and cream) and Arancini Balls with Millet. Non-vegetarians will have a choice of Afghani Murgh Tikka (chicken tikka with Afghan flavors), Amritsari Fish (for Delegates) and Thai Style Wok Fried Prawn (for VIP).

Counter Snacks includes a live Tawa Corn Chaat station and Kolkata Puchka Counter for VIP. The Soup course features Palak Dhaniya Ka Shorba (spinach and coriander soup) and Roasted Pumpkin Soup with Rosemary, accompanied by a variety of breads.

The Salad Bar: an array of fresh and flavourful options, including Garden Green Salad, Fattoush, Cabbage Kimchi, Apple Celery Salad, Assorted Dahi Vada, and Mixed Vegetable Raita. For VIP it has additional options like - Greek Salad with Feta & Olive, German Potato Salad with Garlic Chips, Couscous Salad with Pomegranate and Rocket Leaves, Spinach and Lema Beans Salad and Crispy Noodles Salad with Sweet Chilli Sauce.

The Main Course will have a lavish spread of Indian delicacies. Non-vegetarians can indulge in Punjabi Fish Masala and Murgh Do Pyaza (chicken with a double dose of onions). The vegetarian main course includes Paneer Mutter (Cottage cheese and peas), Anguri Methi Matar Chaman, Veg Jalfrezi and Lasooni Palak (garlic-flavored spinach). Regional specialties like Poi Saga Ghanta and Monja Rai (banana stem) will be offered along with Amritsari Pulao and Jeera Rice. The Dal Counter: Dal Bukhara and Yellow Dal. Live stations serving Sarson Ka Saag with Makki Di Roti, and a Kothu Paratha Station will add an interactive dining experience. A variety of Indian Breads will be available.

The Dessert selection will include Assorted Sandesh, Gajar Ka Halwa (carrot pudding), Puri Khaja, Malai Cham Cham, Hot Chocolate Walnut Brownie, Omali and an Ice Cream Parlor with Toppings.

The culinary experience on the concluding day of Pravasi Bharatiya Divas will reflect India's rich gastronomic heritage. It is a blend of traditional and contemporary flavours, regional specialties, and international influences, for an everlasting memory to cherish.
